Thai Style Chicken Biryani

Thai Style Chicken Biryani (or Biriani) is a classic South Asian dish. It is famous for the rich and flavorful rice which is cooked in a variety of herbs and spices. Just about any protein can be used for a Biryani recipe, but it is most commonly found with either mutton, chicken, or lamb as the protein. Chicken Biryani became popular in Thailand when North Indian traders brought the dish with them. Local Thai's put their own spin on this classic recipe by adding local herbs and spices, and cooking the chicken with the rice instead of cooking it separately and then adding it to the final dish.

I had a great time making this Thai Style Chicken Biryani, but I will admit that this is not a recipe for beginners. There is a long list of herbs and spices that go into this dish, and several different preparation methods used. It can be a bit time consuming, but as the saying goes, "the squeeze is worth the juice". That saying couldn't be more true for this Thai Style Chicken Biryani dish. The hard work you put into this recipe will result in an amazing and delightful eating experience.

One important think that I would like to point out. I wasn't able to get a proper sear on my chicken. Looking back, I should have drained all of the cooking oil from the pan, from when I fried the shallots. I only drained about half of the oil and then tried to sear my chicken thighs. That was a mistake and I recommend anyone recreating my Thai Style Chicken Biryani to use only 1 teaspoon of oil and some butter to get a proper sear on your chicken thighs. Overall, it was a small think to overlook and didn't really change the taste or flavor, but I thought it was important to point out here.

Lastly, I usually get some colorful comments when I mix chicken with my bare hands. I would like to say that I am aware of the potential exposure to harmful food borne illnesses and I always use proper cleaning techniques after handling raw chicken. If you also handle raw chicken from time to time when you cook, then please be sure to wash your hands (up to the elbow) and sanitize anything that the raw chicken comes into contact with to minimize contamination of anything else in your kitchen. These gentle reminders about the dangers of handling raw chicken is something we all should remember.

Dry Spice Mix for Marinade
1 teaspoon coriander seed
1 teaspoon cumin
1 teaspoon fennel seed
2 cinnamon sticks
1/2 nutmeg seed
1/2 tablespoon red chili powder
1 tablespoon turmeric
1 teaspoon black pepper
8 cloves
3 bay leafs
6 cardamom pods

Marinade Sauce
3/4 plain yogurt
1 teaspoons salt
3 slices of fresh ginger
3 tablespoons cilantro stems
3 shallots
5 garlic cloves
Add dry spice mix from above

Main Course
2 and 1/2 cups jasmine rice
2 and 1/2 cups water (+pinch of saffron)
6 pieces chicken thigh with skin on
2 tomatoes
2 teaspoons salt
10 shallots fried crispy
2 tablespoons cooking oil
3 tablespoons butter
