Kaffir limes can be a bit hard to find at your local grocery store. If you can't find them fresh, then try buying frozen kaffir limes online. If that is not an option either, then you can either leave the rind out or use normal lime rind in its place, but for best flavor try your best to find kaffir limes. Don't be afraid to make a lot of Thai Green Curry Paste, put the extra in zip lock bags and throw it in the freezer, it will last for up to a year.
