Mint Dipping Sauce
Mint Dipping Sauce is a great all around sauce that can be used on anything from chicken to lamb. This versions of Mint Dipping Sauce is not creamy like you will find with most European recipes. My version of mint sauce is a classic Thai version, which is based on an Indian recipe that is commonly used with Chicken Biryani. In my experience, you can never have too many sauce recipes up your sleeve. Be it and Italian tomato sauce, a Chinese stir fry sauce, a spicy Thai dipping sauce, or a European butter sauce, the more sauces that you know how to make, the better off you will be in the kitchen.
Sauces can make or break a meal. I was at an Italian restaurant not too long ago that had the perfect handmade ravioli, but the pumpkin cream sauce was awful and ruined the entire dish for me. As a self-taught home cook, I have learned that often times the sauce that accompanies a meal is just as important as the meal itself. And this sauce is sure to be a big hit on your table, especially when paired with Asian chicken or lamb recipes.
If you notice, I added three green Thai peppers in the video, but it came out too spicy with three peppers. I would recommend using only one for flavor and a little bit of heat, or maybe two if you like things a bit more intense, but be careful if adding more than two. You run the risk of losing flavor and only being noticing the heat if you use too many hot peppers in this recipe. But all and all, this Mint Dipping Sauce turned out great and I am even using it in my next recipe.

1 cup fresh mint
1 cup fresh cilantro
1 or 2 Thai green chili peppers
3 slices of ginger
3 garlic cloves
2 tablespoons sugar
4 tablespoons vinegar
2 tablespoons water
1/2 teaspoon salt
