Lemon Tofu

My Lemon Tofu recipe was inspired by Sweet and Sour Chicken. A while back I made a pretty tasty sweet and sour chicken recipe, and I was in the mood for that "sweet and sour" taste again. I opened the refrigerator to see what I had on hand and my creative juices started flowing. Luckily, I was able to pull enough ingredients together without having to make a trip to the grocery store to make this awesome Lemon Tofu recipe. Honestly, it is a fairly simple recipe, which is why I was surprised at how wonderful it turned out. The flavor profile was amazing. A little salty, a little spicy, sweet, and sour. It had all the hall marks of a great recipe. The tofu was extra crispy on the outside and soft on the inside, a trick achieved by lightly coating your tofu in corn starch just before deep frying it. 

While this Lemon Tofu recipe was a "throw together", it will certainly have a permanent spot in my regular recipe rotation. Sometimes experimenting in the kitchen can be a disaster, but this time, it was a complete victory. Tofu Mix
1 box firm tofu
4 tablespoons corn starch (+ pinch of salt)
4 cups cooking oil

Lemon Sauce
1 lemon peel zest
4 tablespoons lemon juice
3 tablespoons soy sauce
1/4 teaspoon salt
2 tablespoons water
3 tablespoons sugar

Other (added during cooking)
2 tablespoons cooking oil
3 garlic cloves finely minced
2 teaspoons ginger finely minced
2 teaspoons chili flakes
1 green onion
