Crispy Ruby is a very typical Thai dessert. The first thing that you will notice about my version of Crispy Ruby is that it isn't as red as other recipes you might find online. But don't let that make you think that this recipe isn't as good. In fact, this recipe is better, and here is why. Those bright red Crispy Ruby recipes that look so great in the picture, are actually using red food coloring. Red No. 40 is something that I chose not to use, instead I got my red color naturally from cranberry juice. Sacrificing a little presentation for health is something that I would do every time. Other natural food dyes that you could use instead of Red No. 40 would include elderberry juice or beetroot juice. I hope you enjoy this recipe.

Crispy Ruby
4 ounces water chestnuts
1 and 1/2 cups cranberry juice
1 cup tapioca flour

1 and 1/2 cups coconut juice
1 cup sugar
2 panden leafs

13 ounces coconut cream
1/4 teaspoon salt
Meat from 1 coconut
