Chicken Satay ไก่สะเต๊ะ - Episode 61


Chicken Satay is a wonderful dish. Satay originated in Indonesia, but was influenced by the Indian kabob. Local Indonesian cooking ingredients and styles were used to transform the kabob in to a new dish, satay. Satay can be found throughout Asia, and is quickly becoming popular throughout the world due to its flexibility and potential variations. My Chicken Satay recipe is the Thai version of Satay, and it is traditionally served with two common condiments, Thai Cucumber Relish and Thai Peanut Dipping Sauce, both of which can be found if you watch the two episodes previous to this one.

Thai cucumber relish (see episode S2:E9)
Thai peanut sauce (see episode S2:E10)
2 pounds chicken breast
5 garlic cloves
1 teaspoon turmeric powder
1 tablespoon curry powder
1/4 teaspoon white pepper
1/2 teaspoon salt
3/4 cup coconut milk
1/4 cup evaporated milk
4 tablespoons sugar
20 cilantro stems
3 medium slices of galangal
2 lemongrass bottoms (more if small)
1/2 teaspoon coriander seed
1/4 teaspoon cumin seed
