Chicken lettuce wraps are healthy, easy to make, and they taste great. My chicken lettuce wrap recipe has ginger, lemongrass, and sesame oil, which really enhance the flavor compared to a a typical chicken lettuce wrap. The ingredients for this recipe are easily found at the local grocery store.
First dice all of your bell pepper, red onion, tomato, and cut the kernels off of your corn. Next thinly slice your chili pepper, lemongrass, and ginger. Once all of your vegetables are cut, you can start cooking them.
Add your sesame oil to a frying pan. When the oil is hot, add your chili pepper, lemongrass, and ginger. Allow it to cook until they start to release their aroma.
When ready, start adding your mixed vegetables. Start with your corn since it will take a bit longer to cook. After about a minute add your red onion. After about another minute add your bell pepper. After about another minute add your lima beans. Once everything is finished cooking, remove and set aside for now. Do not over cook your veggies, you want them to be crisp and fresh, not soft or soggy.
In the same pan, add a little water, and add your ground chicken. Also add your salt, pepper, and soy sauce. Allow your chicken to cook. When it is done cooking, add it to the same bowl as your cooked vegetables.
Crush a small handful of cashew nuts in your pestle and mortar and then add them to your filling. Mix everything together.
Lastly, add your mint leaves and squeeze a lemon into your bowl. Mix everything together again.
Plate your dish with your favorite lettuce. I like to use iceberg or red lead lettuce for my wraps. Enjoy this healthy dish.
Cooking Notes: There are endless variations of wraps. You can change almost anything that you like in a wrap recipe. My favorite variation is to turn this recipe into vegetarian lettuce wraps by replacing the chicken with diced mushrooms.
