Banana Muffins make a great addition to any meal, from breakfast to dinner to a late night snack. Banana muffins are easy to make and everyone in the family loves them. Growing up in Thailand, we didn't have an oven, most Thai homes don't. I never had the opportunity to bake before I came to the US. Banana muffins were one of my first attempts at baking when I first came the the US back in 2009 and I bake them as often as I possibly can. My banana muffin recipe is also fun to make, and a great way to introduce kids to cooking. Fluffy and moist, banana muffins don't last very long in my house, so I always try to make extra. Give this recipe a try, I am sure that you will love it as much as I do.
The ingredient list for making banana muffins is very simple and straight forward. Every ingredient is easily found at your local grocery store. I recommend using organic ingredients whenever possible and affordable.
First mix your dry ingredients, sugar, flour, baking soda, baking powder, and salt into one large cup or bowl.
Next peel your bananas and place them into your mixing bowl. Give them a good smashing until they are mushy.
Next add your eggs into the mixing bowl and mix them well with the smashed bananas.
Next add your vegetable oil, butter, vanilla extract, and lime juice to the mixing bowl. Blend it all until everything is well mixed together.
Next add the dry ingredients that were previously added into one large cup or bowl. I like to sift my powders to ensure that they mix well and to break down any clumps before adding it to my mixing bowl. Once added, blend again until everything is mixed together and has a paste-like consistency.
Pour your batter into muffin tins until they are a little more than half full. The muffins will rise as they bake, so don't pour all the way to the top. This recipe is enough to give you 24 muffins.
Add a slice of banana to the top of each muffin cup.
Preheat your over for 400 degrees Fahrenheit and place your muffins inside. Bake for about 15 minutes. That's it :-)
Cooking Note: Banana muffins are easy and pretty straight forward. That said, there is always room to experiment with any recipe. For example, you could add honey or chocolate chips to the batter, or add other fruits in addition to banana on the top.
