Vietnamese Rice Noodle Salad

Vietnamese Noodle Salad สลัดเวียดนาม(bún gà nướng) is one of those classic dishes that has made Vietnamese food popular around the world. I have been getting this dish at a local Vietnamese restaurant for a few years now and I finally decided to make it myself. I am really glad that I did, because this recipe is amazing. It's going to have a permanent place in my rotation. Since I am Thai, I tend to like my food a little spicy. The original restaurant version of this dish isn't spicy at all, so I was happy to add a Thai pepper and bring a little heat in the dressing. It was just enough to give a small hint of heat, without taking away from any of the fresh flavors. This is a classic dish that is easy to make your own through little changes like the one I did. When making it, you should feel free to make your own changes to suit your eating style.

Ingredients

Marinade Sauce (for the Chicken)
2 tablespoons lemongrass
2 tablespoons shallots
2 teaspoons garlic powder
1 teaspoon black pepper
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon fish sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
1/4 teaspoon salt

Noodle Bowl
1 pound chicken breast (boneless & skinless)
8 ounces dry vermicelli rice noodles
2 cucumbers
12 ounces lettuce
1 cup mint
1/2 cup basil
4 tablespoons crushed peanuts
4 tablespoons crispy onions
1 cup pickled carrot & radish

Salad Dressing
3 tablespoons fish sauce
3 tablespoons sugar
10 tablespoons coconut water
2 garlic cloves
1 Thai chili
