Thai Tamarind Soup is a recipe that I grew up with. My grandfather knew it was my favorite and would make Thai Tamarind Soup for me every time I went to visit him. Now all these years later, I can't eat Thai Tamarind Soup without childhood memories coming back. So for me this recipe isn't just a "good eat" it also takes me back to a time of great joy and happiness of my youth. The smile on my face when I eat Thai Tamarind Soup is really equal parts of deliciousness and fond memories. So, if you have been following my blog or my YouTube channel for a while, then you probably know that I am a huge fan of anything made with tamarind. If you are a lover of anything made with tamarind as well then you're going to love this soup.

Two quick notes about this soup though. First, you can use any protein that you like. I like fish, but I have also made this with chicken. Just use your favorite protein. Second, this recipe has a very small amount of shrimp paste. Yes, I know, the very strong tasting and horribly smelling shrimp paste that everyone seems to be weary of. But please don't leave it out. When shrimp paste cooks, the strong smell goes away and the great flavors come out. If you are new to shrimp paste, or simply not a big fan of it, you can cut the amount used down by half. Give this amazing soup recipe a try and you will love it.

Ingredients

Soup Base (Paste)
1 teaspoon black peppercorns
5 tablespoons shallots
2 teaspoons cilantro stems
2 teaspoons ginger
1 teaspoon salt

Tamarind Soup
1 pound fish
2 tablespoons cooking oil
3 cups water
3 tablespoons fish sauce
3 tablespoons palm sugar
3 tablespoons tamarind sauce
5 green onions
2 tablespoons ginger

Garnish
1 crispy shallot
1 red pepper
2 cilantro sprigs
