My Thai Cashew Chicken recipe turned out really tasty. I think I surprised "The Cameraman" with how flavorful it was. I have made this recipe for him before, but this is the first time that it came out this good. We made enough for 3 or 4 people but ended up eating it all ourselves between having it for lunch and again for dinner. 

In this case, I think the key to having a good recipe turn out to be a great recipe, was the sauce. Of course, the fresh veggies and spices all add to a great recipe, but with this one, the sauce really elevated the flavors to the next level. I used my own homemade Thai Chili Paste as the base ingredient for the sauce. The video for that recipe is right here (Thai Chili Paste - Episode 64) in case you want to make it. Adding that chili paste with top brand ouster sauce, fish sauce, and soy sauce made things great. The sum is greater than the parts in this case. One quick tip about oyster sauce, read the label and be sure that you are buying oyster sauce made with real oysters, not just mushrooms or oyster flavoring.

Ingredients

1 pound chicken
2/3 cup cashew nuts
15 dry Arbol chili peppers
2 tablespoons Thai chili paste
3 tablespoons soy sauce
3 tablespoons oyster sauce
2 tablespoon fish sauce
3 tablespoons sugar
1/4 cup chicken stock
1 cup white mushrooms
3/4 cup mixed bell peppers
1/2 cup onion
3 green onions
5 garlic cloves
1/2 cup tempura flour
Salt and pepper to taste
1/2 cup cooking oil
