4 slices galangal
2 lemongrass stalks
5 kaffir lime leaves
15 cilantro stems
Large handful of fresh basil
Pinch of sea salt

Thai Dipping Sauce
15 Thai chili peppers (super spicy, less for more mild)
8 cloves garlic
1 tablespoon chopped cilantro stem
1 tablespoons thin sliced lemongrass (bottom part)
2 tablespoons palm sugar
3 tablespoons lime juice
3 tablespoons fish sauce
