Red Curry Shrimp is one of my favorite ways to cook shrimp, or curry for that matter. While curry originated in India, Thai curry paste is slightly different than traditional Indian curries. Thai curry paste uses fresh herbs, aromatic leaves, and  other unique Thai ingredients in their curry pastes. Thai curry pastes almost always include shrimp paste, hot chilies, onions, garlic, lemongrass, galangal, and cilantro root as the base ingredients, with more things being added as needed to further differentiate the different kinds of curry pastes. Any way you add it up, Thai curry is always an exciting and explosive take on curry. This Red Curry and Shrimp recipe is full of flavor and is sure to be a hit, so give it a try.

While this recipe is great as is, you can easily substitute at least a couple of things. For example, if fresh green beans are out of season, use asparagus, or nopal (cactus) strips. Your creativity in the kitchen is limited only by your imagination.

10 ounce peeled shrimp
1/4 cup chicken broth
3 tablespoons red curry paste
6 kaffir lime leafs
3 red chili peppers
1 and 1/2 tablespoons brown sugar
1 tablespoon oyster sauce
1 tablespoon fish sauce
2 tablespoons coconut oil
