Pot Stickers เกี๊ยวซ่า are a great appetizer. I used to order them every time I went to an Asian restaurant. That is, until I learned how to make them. Now I never order them out, because I can make them much better than what I typically find outside. Pot Stickers are not hard to make, but they do take a little care to get right. Over stuff the wrapper and you will end up with busted pot stickers, under stuff the wrapper and you end up with a mouthful of wrapper dough. But if you get the balance just right, you will end up with a bite sized explosion of flavor in your mouth. I used ground pork in this recipe, but you should feel free to use your favorite protein. I also love pot stickers with ground shrimp and chicken. All and all, it's a very forgiving dish, so if it's your first time making pot stickers, then don't worry, chances are they will turn out great.

1 pound ground pork
1 and 1/2 cup shredded cabbage
3 green onions
3 cloves garlic
1 teaspoon ginger
2 tablespoons seasoning sauce
2 tablespoons oyster sauce
1 tablespoon cooking wine
1 teaspoon sesame oil
1/4 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon sugar
1/3 cup water (per batch)
2 tablespoons cooking oil
54 pot sticker wrappers
1 and 1/2 teaspoons corn starch

Dipping Sauce
1/4 cup black soy sauce
1/4 cup seasoning sauce
1/4 vinegar
4 tablespoons sugar
1 teaspoon sesame oil
1 teaspoon chili oil
