Pork and Veggie Soup ต้มจับฉ่าย is a classic regardless of the region in which it is made. I have had some truly amazing pork and veggie soups made in the US and I am always a huge fan of how hearty soups in general in the US. So I decided to share a classic pork and veggie soup the way we do it in Thailand. This soup is loaded with delicious veggies and pork. In Thailand, we like to use pork cuts that are a little on the fatty side so you get more flavor, but that's up to you.

Ingredients

16 ounce pork ribs
6 ounce pork belly
14 ounce tofu
6 cups collared greens
6 cups bok choy
4 cups cabbage
2 cups daikon radish
2 cups Chinese celery
4 cups mushrooms
5 garlic cloves
6 cups water
2 tablespoon soy sauce
2 tablespoon seasoning soy sauce
2 tablespoons soybean paste
1 teaspoon salt
1/4 cooking oil
