Hainanese Chicken Rice is a very popular dish throughout Asia. Although Hainanese Chicken Rice originated from the Hainan province of southern China, it has become a staple street food in Thailand, Vietnam, Malaysia, and has even become one of the "National Dishes of Singapore". Making Hainanese Chicken Rice is a three part process. First you prepare your chicken, then your rice, and then your sauce. Well, I guess there is really a fourth process, it is common to reuse the chicken stock to make a mild soup. I do stress, MILD soup, as it is really just a light palate cleanser when switching between sauce types. The ingredients for Hainanese Chicken Rice are pretty straight forward and commonly found at your local grocery store. Although, for a few items such as the soybean paste or black soy sauce you might need to venture out to your local Asian grocery store. 

Hainanese Chicken is a delicious dish the way it was intended to be. I wouldn't change much otherwise you run the risk of losing the classic flavors and traditional recipe. That said, of course some things are easily added or substituted. The easiest substitution is the sauce. You can make variations of the dipping sauce to accommodate different tastes. The three variations of dipping sauce I provide in this recipe are a good place for you to start, but is by no means the only way to go with this dish.

Ingredients 

Part 1 - Chicken
Whole chicken
Filtered water (enough to cover chicken)
Salt
4 garlic cloves
3 slices ginger
1 teaspoon pepper
14 cilantro stems

Part 2 - Rice
3 cups jasmine rice
4 cups chicken stock
4 cloves garlic
3 slices ginger
1 teaspoon salt
Chicken fat remove from chicken

Part 3 - Sauce
5 tablespoons soy bean paste
5-6 cloves garlic
2 tablespoons ginger
2 Thai peppers
4 tablespoons cilantro
1 tablespoon lime
1 tablespoon vinegar
1 tablespoon brown sugar
2 tablespoons black soy sauce
1 teaspoon soy sauce
1 teaspoon seasoning sauce
