Four Cheese Cauliflower
It's February and this Four Cheese Cauliflower is my first recipe since being back from my five week trip to Thailand. Cauliflower Cheese is a traditional English dish, but I figured I would break from the "Old World" tradition and do something that reflects my own style. What is that, you might be wondering. Well, if one cheese is good, then four cheese must be amazing. That's right, I turned a classic and proper English dish into a fun cheesy delight.
I would love to say that it is a healthy recipe because of the cauliflower. But all the cheese probably makes this dish at least "little" less healthy. That said, I didn't intend to go healthy here, instead I opted for fun and delicious. This Four Cheese Cauliflower recipe turned out really good, but I expected it too since I love both of the main ingredients, cauliflower and cheese. I wasn't really into cheese until I met "The Camera Man" (Joe), who is something of a cheese aficionado. Over the years I have become a fan of the more mild and easier to eat cheeses. Although, I still have a hard time with some of the more advanced, and stinky, cheeses.
We used a whole head of cauliflower in this recipe. Each bowl held half of the head. At first I thought it was going to be too much for just the two of us. But it turned out being just right since we ate it as our main dish for dinner. If you are making this as an appetizer or a side dish, then you could easily feed more than just two people with it.

1 whole cauliflower (8 cups bit sized cuts)
1/3 cup milk
1/3 cup cheddar cheese
1/3 cup Parmesan cheese
1/3 cup mozzarella cheese
4 tablespoons feta cheese
1 teaspoon your favortie spice blend
salt & pepper to taste
