Egg Tofu เต้าหู้ไข่ - Episode 23

Egg Tofu is very quick and easy to make. Egg tofu is a little different than normal tofu, with added protein from the addition of egg in the recipe. Not only is it easy to make, but egg tofu is a very versatile dish. It can be used in anything that you would normally use regular tofu with. The ingredient list is very simple. All you need is soy milk (see Episode 18), eggs, and a pinch of salt.

First crack your eggs into a bowl or measuring cup. Mix them gently, as you want to minimize the amount of air bubbles. Fewer air bubbles at this stage will result in smoother egg tofu as the end result.

Next add your soy milk to the eggs, add a pinch of salt, and gently mix again. Adding more soy milk will result in softer egg tofu, while adding less soy milk will result in firmer egg tofu. Again, it is important to mix gently to avoid air bubbles.

Strain your mixture in order to remove the thick egg whites that don't easily mix. Again, this will make your egg tofu smoother, since there won't be any egg white clumps in your end product.

Pour your mixture into small steam-safe containers. I am using silicon cup cake liners for this recipe, but you can use anything that is steam-safe. I am also using a steam basket to hold the silicon liners.

In a large wok or angled pot, boil some water. Once your water is boiling, add your steam basket. Lower your heat, and allow to simmer for 15 to 20 minutes.

After about 15 to 20 minutes, your egg tofu will be cooked and can be removed and plated.

Plate your egg tofu and add a little diced ginger, and green onions to the top. Add a little sesame oil to your soy sauce, and pour a little over the top of your egg tofu. Enjoy this light and healthy snack.

Cooking Notes: There isn't much you can change in this simple recipe, after all it is just soy milk and egg. However, the egg tofu is a very versatile base that can be used in many dishes. In this recipe I topped my egg tofu with ginger, green onions, and soy sauce. But in the next recipe I will show you just how versatile egg tofu is by giving you a different way to top it.
