I wanted to make something that was quick and easy for a weekday meal. But the best part of this quick and easy recipe, is knowing that you're not sacrificing the quality of your food, just because it is quick and easy. Fast food doesn't always have to be bad.
The key to any cold noodle salad, is the quality of the noodle itself. JSL Foods is the creator of Fortune, one of the best pre-cooked noodle brands available. Not only are their noodles good for you by being cholesterol free and MSG free, but they also taste great. I used the Yakisoba Teriyaki noodles for this recipe, added some fresh veggies, grilled tofu, and pineapple, and the results were amazing. 1 pack Fortune Yakisoba Teriyaki noodles
2 ounces tofu fillet
2 ounces thin sliced pineapple
6 ounces finely slices lettuce
1/2 shredded heirloom carrot
1/2 shredded cucumber
1/4 red bell pepper
1 green onion
1/2 teaspoon toasted sesame seeds
1 tablespoon coconut oil
Dizzle of sesame oil
Pinch of salt
