Chicken Ginger Stir Fry is one of my favorite types of stir fry dishes. Stir fry in general is a creative dish at heart. There are no hard set rules and it is a great cooking platform to experiment with. Chicken Ginger Stir Fry uses lots and lots of (you guessed it) GINGER! The ginger should be the hero of this dish. With each bite your mouth should explode with ginger, so don't be shy and under do it. But beware of going too bold, you don't want to lose the other great flavors in this dish. Ginger is the hero not the conqueror. Most of the ingredients for this recipe can be found at your local grocery store. But you might need to go to an Asian grocery store for the soy bean paste and oyster sauce.

One of the easiest things to substitute in this dish is the hot peppers. I love my food spicy and used both red fresno and green jalapeno peppers in this recipe. However, if you don't like the heat then you can swap out the hot peppers for red and green bell peppers. Also, you're not limited to the type of mushroom to use in this dish. You should use your favorite mushroom. This dish is usually served with rice, I like to use white and brown rive mixed. Make this dish your own and send me some pictures when you make it.

14 ounces chicken
6 ounce mushroom
3 ounce ginger
4 garlic
4 or 5 green onions
2 red fresno peppers
2 jalapeno peppers
Little shredded carrot
4 tablespoons cooking oil
2 tablespoons cooking wine
3 tablespoons soy bean paste
1 and 1/2 tablespoons seasoning sauce or soy sauce
1 tablespoons oyster sauce
1 teaspoons sugar
Little black pepper
Little sesame oil
