I used three different types of cheese as my primary ingredient along with chorizo as the secondary ingredient, and then wrapped it all in bacon. Chorizo is a type of pork sausage that originated on the Iberian Peninsula areas of Spain and Portugal. Its deep smoky flavor make for a great addition to jalapeno poppers. This dish is deceptively simple and quick to make. But don't be fooled by its simplicity, the flavors are amazing and go together well.
