The original restaurant version of this dish isn't spicy at all, so I was happy to add a Thai pepper and bring a little heat in the dressing. This is the first time that I have cooked with salted cod so I wasn't sure what to expect in terms of taste, texture, and basically just how well it would cook. I am happy to say that Cristol Brand Salted Codfish was super easy to cook with, was not overly salty, and it had a great texture and taste. Since this recipe used salted cod, I wanted to add something to provide a balance to the salt. Deciding on coconut and curry to act as a balance was a great idea, it added a level of creaminess to this dish that was really unexpected.
