Salted Cod with Coconut Curry is a great tasting dish. This is the first time that I have cooked with salted cod so I wasn't sure what to expect in terms of taste, texture, and basically just how well it would cook. I am happy to say that Cristol Brand Salted Codfish was super easy to cook with, was not overly salty, and it had a great texture and taste. Since this recipe used salted cod, I wanted to add something to provide a balance to the salt. Deciding on coconut and curry to act as a balance was a great idea, it added a level of creaminess to this dish that was really unexpected.

The great thing about hot pot is that you don't really need to follow any set rules. You can use your favorite ingredients to ensure that you really get a meal that you will love. No two hot pots need ever be the same when you think about it this way. You can even do vegetarian version if want.

Today I had an opportunity to get out and spend a little time with a close friend of mine. We had hot pot for lunch at MK. The food was good and the time spent catching up with my friend was great.
