2 tablespoons panang curry paste (Episode 175)
2 tablespoons coconut oil
1/2 cup coconut milk
1/4 cups water
10 ounces shrimp
1 and 1/2 tablespoons fish sauce
1 and 1/2 tablespoons palm sugar
4 kaffir lime leaves
1/4 green bell pepper
red bell pepper (for garnish)

One Pot Shrimp and Noodle - Episode 166

This One Pot Shrimp and Noodle recipe was so good that I actually made it two nights in a row. The first night I made it with chicken skin in the "bottom layer", and the second night I made it with bacon in the "bottom layer", as shown in this recipe. Everything else was identical in every way. Both versions were amazing and amazingly both versions were very different by making this one simple change. Glass noodles and shrimp alike are great flavor carriers. They both take on the flavor of whatever they are cooked with, which is why changing the fatty ingredient, either chicken skin or bacon, made this recipe have two completely different flavor profiles. I will be trying this again very soon and will more than likely try it with a different fatty ingredient. The Cameraman suggested chorizo, but I am thinking mackerel.

As the vegetables and meats cook in the broth over time, the broth becomes a very unique soup for everyone to enjoy. The great thing about hot pot is that you don't really need to follow any set rules. You can use your favorite ingredients to ensure that you really get a meal that you will love. No two hot pots need ever be the same when you think about it this way. You can even do vegetarian version if want.

Simply put, there is possibly no better combination than asparagus and shrimp, or maybe I am just really excited about how great the flavors were in this dish. Aside from just flavor, the crunchiness of the asparagus and the firmness of the shrimp brought a great texture to my mouth.
